Breakfast & Brunch Cookies & Scones Recipes

Cranberry-Grapefruit Scones

Just another scones recipe which I’ve created! Sometimes you just need to improvise, and use the things you have at home! Originally I wanted to use the cranberries differently but they ended up in this recipe. In Austria you don’t get to buy fresh cranberries very often. More or less I’ve seen them like 3 times last year and only during the month of November! Which is very sad since I love to use fresh ones and not prefer the frozen.

I hope you will enjoy this scones recipe as much as I do. Please leave us some kindly words if you like this post. Did you try this recipe? Awesome! Tag us @twosisterslivinglife on social media. We love to hear from you.

Ingredients

  • 1 cup buttermilk
  • 1 egg
  • 1 tbsp pure vanilla extract
  • 2 3/4 cup spelt flour or any whole grain flour
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2/3 cup butter cuped
  • 1 cup cranberrys fresh or frozen

Instructions

  • Preheat the oven to 200°C and line baking pans with parchment paper
  • In a small bowl whisk together the egg, buttermilk and vanilla extract.
  • In a large bowl whisk together the flour, coconut sugar, baking powder, baking soda, cinnamon until combined. Add butter cubes, then rub in with your fingers until the mix looks like fine crumbs. You can also use a pastry knife. Add the cranberries (I've used fresh ones) and toss to evenly distribute.
  • Add the wet ingredients and gently with a spatula fold into the dry ingredients until a ragged dough forms. Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it’s a little smoother. Divide the dough into 2 parts and shape each half into a disk about 1 1/2 inch thick. Cut each disk into 6 parts. You should end up with 12 scones.
  • Add scones onto a baking sheet, 6 each sheet, and brush with melted butter and sprinkle with brown sugar.
  • Bake for 18-20 minutes until golden brown. Let cool.
  • Once the scones have cooled for a few minutes, drizzle with the grapefruit glaze (2-3 tbsp grapefruit juice, 1 1/2 cup icing sugar depends on consistency, whisk together until smooth)
