Sourdough Baked chocolate cherry cake with salty walnut cinnamon crust – easy sourdough discard recipe
Ingredients
- 250 g cherries Cut in half and pitted. and some more cherries for decoration
- 200 g sourdough discard needs to be taken out of the fridge and come to room temperature 1 hour in advance.
- 30 g butter for the tart form
- 2 tbsp sugar for the tart form
- 4 large eggs separated
- 50 g butter room temperature, very soft
- 50 g vegetable oil
- 200 g white sugar for the egg yolks
- 50 g white sugar for the egg whites
- 100 g spelt flour or all purpose
- 100 g finer chopped walnuts
- 50 g unsweetend cocoa powder
- 1 tsp cinnamon

- 50 g chopped walnuts
- 1 tsp cinnamon
- 2 tbsp brown sugar
- 1/2 tsp salt
- 30 g soft butter
Instructions
- Start with beating some air into the discard with a spoon and let the discard come to room temperature for about one hour.
- After the discard has come to room temperature, preheat your oven to 170°Celsius (350°F) aircirculation.
- Butter the inside of your tart form and sugar it out afterwards.
- Mix togehter the spelt flour, finer choopped walnuts, cinnamon, unsweetend cocoa powder and put aside.
- Beat the egg whites with the 50g white sugar in a bowl of a standmixer until stiff and glossy (4-6 minutes). Put the bowl aside.
- In another bowl of your stand mixer mix togehter sourdough discard, 200g white sugar, egg yolks, vegetable oil and butter until creamy . 6 min
- Now fold in alternately the flour mixture and the egg whites in 4 steps into the discard batter and mix everything carefully. Small egg white lumps are totally fine.
- At last fold in 2/3 of the cherries.
- Pour the batter into the cake form and place the rest of the halved cherries gently on top going in circles from the outside to the inside.
- Bake the cake for about 20 minutes .
- Take the cake gently out of the oven and sprinke the salty walnut crust mixture evenly on top. Leave out the edges.
- Bake the cake for 30-40 more minutes until a wooden skewer comes out clean.
- Let the cake cool completely and decorate with more cherries and some chopped dark chocolate .
Salty walnut Cinnamon crust
- When the cake is in the oven for the first 20 minutes mix all ingredients together with a fork or your fingers.
