Apple Cinnamon Crumble Muffin

Just saying these are the best apple cinnamon muffin with the most delicious cinnamony crumble topping ever! Your whole home will smell AMAZING!

And they are perfect if you don’t have time in the morning like me, because I am always over sleeping and there is never time left to eat proper food!

How to make these yummy Apple Cinnamon Crumble Muffin

First off, do you have muffin liners? if not I am always using parchment paper!

This recipe is really easy it just need a couple of ingredients but it’s totally worth it!

You will need:

  • whole grain flour
  • oat flour
  • oats
  • quinoa uncooked
  • baking sofa
  • baking powder
  • raisins
  • pecans
  • salt
  • apple, duh;)
  • egg
  • dark brown sugar
  • maple syrup
  • butter
  • yoghurt
  • pumpkin spice or just cinnamon
  • apple sauce

In a large mixing bowl combine the flours, oats, quinoa, baking soda, baking powder, raisins, pecans and salt.

In a smaller bowl combine the grated apple, egg, brown sugar, maple syrup, butter, yoghurt, pumpkin spice and apple puree.

Add the liquid mixture to the dry ingredients and combine.

The cinnamon pecan crumble

Combine flour, brown sugar, pecan, cinnamon and oats. Add the chopped butter and combine.

Fill the muffin liners with dough and top it off with at least 1 tbsp of the crumble mixture.

Slice a small apple and put 3 slices on top of the crumble and add a bit of maple syrup to the apple slices. Bake for 20-25 minutes.

Perfect breakfast!

These are my favorite breakfast muffin. I always freeze them and let them thaw over night to have something delicious in the morning.

Ingredients

Muffin

  • 3/4 cup whole grain flour
  • 3/4 cup oat flour
  • 1/4 cup oldfaschioned oats
  • 1/4 cup quinoa uncooked
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/3 cup raisins
  • 1/3 cup pecans chopped
  • 1/4 tsp salt
  • 1 apple large, grated
  • 1 egg
  • 1/2 cup raw brown sugar
  • 1/4 cup maple syrup
  • 30 g butter melted
  • 2 tbsp yoghurt lactose free
  • 1 tsp pumpkin spice
  • 2 tbsp apple puree

crumble topping

  • 1/3 cup whole grain flour
  • 1/3 cup oats
  • 1/3 cup pecan chopped
  • 1/3 cup brown sugar
  • 70 g butter
  • 1 tsp cinnamon

Instructions

  • Preheat the oven to 180°C. Prepare a large muffin pan with muffin liner or selfmade ones made of parchment paper.
  • In a large mixing bowl combine the flours, oats, quinoa, baking soda, baking powder, raisins, pecans and salt.
  • In a smaller bowl combine the grated apple, egg, brown sugar, maple syrup, butter, yoghurt, pumpkin spice and apple puree. Add the liquid mixture to the dry ingredients and combine.
  • Prepare the crumble:
    Combine flour, brown sugar, pecan, cinnamon and oats. Add the chopped butter and combine.
  • Fill the muffin liners with dough and top it off with at least 1 tbsp of the crumble mixture.
  • Slice a small apple and put 2 slices on top of the crumble and add a bit of maple syrup to the apple slices.
  • Bake for 20-25 minutes.
